Stollen

3/4 cup milk
1/2 cup water
1/2 cup butter
4 1/4 cups flour ( more MAY be needed)
1/2 cup sugar
2 tsp. salt
2 envelopes active dry yeast
1 egg
3/4 cup candied fruit
3/4 cup nuts, chopped
1/2 cup raisins
1 tsp. orange rind
3/4 tsp. cardamom
butter
10x sugar

Heat milk, water and butter in small saucepan until 120 degrees.

Whisk 1 1/4 cups of the flour, salt, and yeast in a large mixer bowl. Add warm milk mixture; beat on medium speed 2 minutes. Add egg and 1 more cup flour. Beat on high 2 minutes. By hand, stir in remaining flour until batter is stiff. Transfer to greased bowl; turn to coat. Cover and let rise in a warm place until doubled.

Combine candied fruit, nuts, raisins, rind and cardamom. After dough has risen, knead in fruit mixture.

Divide dough into thirds. Shape each third into a loaf and place on a greased baking sheet. Cover and let rise until doubled.

Preheat oven to 350 degrees. Bake at 350 Degrees for 35 minutes or until bottom sounds hollow when lightly tapped. Let cool on rack.

While still warm, brush with butter and sprinkle with 10x sugar.

Makes 3 loaves.
