3 oz. unsweetened chocolate
3/4 cup water
3/4 cup sugar
1/8 tsp. salt
3 egg yolks
1 1/2 tsp. vanilla
1 3/4 cup whipping cream
3 Tblsp. sugar
3/4 tsp. vanilla
Melt chocolate with water over low heat, stir until smooth. Stir in 3/4 cup sugar and salt. Bring to a boil over
medium heat, stirring constantly. Reduce heat and simmer 5 minutes, stirring constantly.
Blend a small amount of hot mixture into egg yolks. Stir in remaining hot mixture. Cook and stir 1 minute longer.
Cool to room temperature and add 1 1/2 tsp. vanilla.
Whip cream with 3 Tblsp. sugar and 3/4 tsp. vanilla until soft peaks form. Fold into chocolate mixture. Pour into mold and freeze until firm.
