
Tudor House Welsh Rabbit
The success of this dish, sometimes mistakenly called "Welsh Rarebit", lies in cooking it over low heat until the cheese has melted.

| Ingredients (for 4): |
| 8 oz. grated Cheddar cheese |
| 1 oz. unsalted butter |
| 1 teaspoon English mustard |
| 3 tablespoons of beer |
| Salt & black pepper |
| 4 slices of buttered toast |
Instructions: Cook the cheese, butter, mustard and beer in a heavy pan over very low heat; season. Stir occasionally until the mixture is smooth and creamy.
Spoon the cheese on to the toast and put under a hot grill until golden and bubbling.
