Here is a sample of the delicious recipes in this book

FIESTA DINNER
4 cups shredded lettuce
1 cup chopped green onions
1 1/2 cups chopped fresh tomatoes
2 cups shredded fat-free cheese, Cheddar or your choice
2 cups chunked fat-free processed cheese, such as Healthy Choice (comes in 1 or 2 pound packages in a long green box - looks like Velveeta)
1/4 cup skim milk
2 cups Minute rice
2 (15-ounce) cans fat-free chili (with or without beans)
3 to 4 cups crushed low-fat tortilla chips

Shred the lettuce and chop the onions and tomatoes if you are serving buffet style. Place the vegetables and the shredded cheese in separate serving dishes.
Put the chunked processed cheese in a microwave-safe bowl along with the skim milk. Cover with a loose sheet of plastic wrap; microwave for 2 minutes. Stir; microwave for 2 more minutes, repeating until heated and smooth.
Prepare the rice according to package directions, leaving out any butter or margarine; keep warm. Meanwhile, heat the chili in a saucepan over low heat (be careful not to scorch) and keep warm.
Line the dishes up if serving buffet style in the following order, or if you are serving the plates, layer in this order:
1. 3 to 4 cups crushed low-fat tortilla chips
(1 cup reserved)
2. Shredded lettuce
3. Rice
4. Chili
5. Shredded cheese
6. Chopped onion
7. Chopped tomatoes
8. Melted cheese over all
9. Reserved crushed tortilla chips
Serve with low-fat tortilla chips, warmed if desired.
