Stick Your Neck Out

If you've never heard about the Giraffe Project before, you don't know what you are missing. ESPECIALLY if you have kids. The Giraffe Project was born in 1982 to recognize "ordinary" people who choose to "stick their necks out" to help others in more ways than you can imagine. It is also their goal to encourage more "giraffes", especially children, to do something special to make a difference in this world. They have curriculum available that would be great for any school situation. If your child attends private/public schools you should "stick your neck out" and try to get the school to add this curriculum. Even if you aren't in the market for the curriculum, the stories of the "giraffes" on the web site archives would be a great collection of stories to read to start your day, or as a bedtime tradition. With so many children thinking that movie stars or sports celebrities are the only "heroes" around (I'm sure some do special things in their private lives), this is a great way to reveal the hidden heroes who truly make a difference. Travel Deals

With all that is going on in our world today, now may be the perfect time to take that family trip. I think the horrific events have certainly made us all appreciate the gift of our family & friends so much more, and what a great time to spend time with the people we love. With all the new security measures, flying may be safer than it ever will be. But even if you don't want to hassle with an airport, you can still take advantage of all the discounted prices that are out there for trains, buses, & motels. Why not make it an extended family reunion & invite everyone to meet at the same place. One of our readers who is a hotel director of sales, Jodi L., was telling me how they are offering unprecedented discount rates at this time. This also helps support the tourism industry which has taken a hard hit along with other groups. Check with your travel agents, studies have shown that travel agents can usually get you a better deal than what you can find on your own or on the internet.

Best Tour Books

My absolute favorite tour books of all time are the Baedekers' Tour guides. If you want to REALLY get a feel for a country, & not just hit the hot spots, these are the books for you. Very reasonably priced at about $15/book, they cover countries, or in some cases, particular cities or states. What do you get for $15 in most of the books...giant fold-out road map, sections on a large number of cities in the country, maps of the major cities, architectural/artistic/historic/scenic/hotel/restaurant info, phrase book section, weather info, maps of nature attractions/museums/transportation corridors, hundreds of color photos. What makes them so good? Over 160 years ago, Karl Baedeker wrote guidebooks by going out & checking out the cities & sights himself, and his company has continued that tradition even today. So if you are heading to another country, get the guidebook ahead of time to help you enjoy your trip more. They are usually updated frequently. Another good tour book resource for the area you live in (if they don't have a Baedekers' for your area :-), is to check out local antique/consignment/book stores to see if they have books on day trips in your area. International Recipes Site

Now if you aren't in the market for travel to another country, here's a site that will help you get a little taste of just about any country you might be interested in. Marilee has put together an amazing International Foods web page. You can click on the country you are interested in & find a list of different sites to visit that have recipes for that country. In some cases they are even in the native language. This is also a great idea for those hosting people from other countries to make them feel more at home. Recipe: Indonesian Mie Goreng

Cook 6 oz oriental style noodles (like Top Ramen) to directions & put aside in cold water until ready to use. Heat 2 tblsp oil in large frying pan. Add 1 med. onion chopped, 2 garlic cloves crushed (or 1/4 tsp garlic powder), & 1/2 tsp salt. When all turns a bit yellow , add 2 chicken breasts cooked & cut into bite sized pieces, 1/2 lb raw shrimp peeled (can substitute additional chicken if desired). Then add 2 C oriental cabbage cut in small pieces, 1 med. tomato chopped, 1 bunch spring onions chopped, 4 stalks celery chopped, and 1/2 C soy sauce. Heat through, then drain & add cooked noodles, & mix all together. Great when served alone or on rice. Serves 6-8.

Back Issue Treasure -- May 1st, 2000 Issue

The main reason I'm featuring this back issue is that it has an article on Home School Legal Defense Association's program providing homeschool scholarships to widows & their children.
