Bring 1-1/2 cups water to boil in
pan, add sugar and salt; stir. Boil for 1 minute. Pour in pine
nuts. Bring to boil. Turn off gas. Leave on stove top and let soak for 30 minutes, then
drain dry. Set aside. |

Heat oil to
about 250° F in pan; pour in drained pine
nuts slowly and carefully. Fry over low heat for 3 minutes or until golden brown. Remove
nuts from heat.
Drain dry. Serve cool. Make 3 servings. |
