    What you'll need:
 
  1   skinless, boneless chicken breast
  1   medium Taiwan white-bitter melon
  1   tablespoon cornstarch
  1   tablespoon white wine 
  1   tablespoon white pepper powder
  ¼   teaspoon salt
    Directions:
 
  1.   Cut melon into thin slices. Discard seeds.
  2.   Cut chicken breast into thin strips. Mix with cornstarch, wine, and salt in a bowl; set aside let marinade for 5 minutes. 
  3.   Heat 2 tablespoons oil in pan; sauté chicken on high heat until no longer pink inside. 
  4.   Add melon, stir-fry 2 minutes. Cover; simmer 3 minutes. Stirring constantly. 
  5.   Remove from heat. Serve with rice. Makes 4 servings.
