Use
rice cooker to cook glutinous rice. |

Slice chicken into thin strip; marinate 30 minutes.
After 30 minutes, continue the following steps.

Heat 2 tablespoons oil in pan,
stir-fry chicken until cooked. Set side.

Heat 2 tablespoons oil in pot to very hot but not smoking, stir-fry shallot 2 minutes, add mushrooms; continue to stir and cook for 1 minute. Add lotus
seeds; blend evenly. Pour in chicken; mix well. Add rice; mix well.

Remove from heat. Spread cilantro on top. Serve.
Make 6 servings.
