   Directions:
 
  1.   Use rice cooker to cook glutinous rice. 
  2.   Slice chicken into thin strip; marinate 30 minutes. After 30 minutes, continue the following steps.
  3.   Heat 2 tablespoons oil in pan, stir-fry chicken until cooked. Set side.
  4.   Heat 2 tablespoons oil in pot to very hot but not smoking, stir-fry shallot 2 minutes, add mushrooms; continue to stir and cook for 1 minute. Add lotus seeds; blend evenly. Pour in chicken; mix well. Add rice; mix well.
  5.   Remove from heat. Spread cilantro on top. Serve. Make 6 servings.
 
    What you'll need:
 
  2   chicken breast, boneless, skinless
  2   cups glutinous rice, raw
  ½   cup lotus seeds, cooked and sweetened
  6   black mushrooms, diced
  4   shallot, finely chopped
  1   bunch cilantro, finely chopped
  2   tablespoons corn oil
  1   tablespoon soy sauce
  3/4   teaspoon salt
    Mixtures to Marinate Chicken:
  1   tablespoon soy sauce
  1   tablespoon wine
    tablespoons green onion
  1   tablespoon ginger juice
  1   tablespoon cornstarch
