   What you'll need:
 
  3   eggs
  2   tomatoes
  1   stalk green onion
  ½   teaspoon salt
  2   tablespoons corn oil

  Directions:
 
  1.   Cut green onion into small bits. Cut tomatoes into thin slices. Beat eggs in bowl.
  2.   Heat 1 tablespoon oil in pan, stir-fry tomato slices 20 seconds. Set aside.
  3.   Heat 2 tablespoons oil to very hot but not smoke in pan, scramble egg until solid. Stir in tomato slices. Add salt. Stir evenly. Stir in green onion bits.
  4.   Remove from heat. Serve with steamed rice. Makes 4 servings.
