Dumplings 6 Serving

 
   
  Directions:
 
  1.   Chop shrimp finely into small pieces.

  2.   Shred bamboo shoots; squeeze out excess water.

Combine chopped shrimp bits, shredded bamboo shoots, ground pork, soy sauce, sesame oil, black pepper, salt, egg white, and cornstarch in bowl; mix well. This is the dumpling filling for Step 5.

Combine 2 cups flour and 1 1/2 cups boiling water in large bowl, stir and mix well with spoon to make soft dough. Knead on floured surface until smooth about 4  minutes. Divide dough into 30 pieces; flatten each to 11/2 inch round shaped skin.

 
 
     What you'll need:
 
  2   cups flour
  1½   cups water (for Step 4)
  8   cups water (for Step 6)
  6   oz. medium shrimp (peeled, de-veined)
  3   oz. ground pork
  3   oz. bamboo shoot, cooked
  1   tablespoon soybean sauce
  1   tablespoon sesame oil
  1/4   teaspoon black pepper
  1/2   teaspoon salt
  1   teaspoon cornstarch
  2   egg white

 Use two hands to make dumpling; put 1 tablespoon of filling inside each dough skin; moisten skirt of dumpling skin, fold dumpling as shown in video.

Bring 8 cups water to boil in steamer; steam dumplings over high heat for 20 minutes or until cooked. Remove  from heat.

  7.   Arrange steamed dumplings on plate. Serve. Make 6 servings.
