  Directions:
 
  1.   Remove shrimp shell, head, legs, and de-vein. Smash shrimp with food processor.
 
  2.   Combine ¼ tablespoon ginger juice, ½ tablespoon salt, 1 tablespoon egg white, 1 tablespoon cornstarch, 1 tablespoon wine, and 2 tablespoons water in a cup. Set aside for next step.
 
  3.   Mix smashed shrimp, ground pork, and sauce from Step 2. in bowl, stir until smooth.

     What you'll need:
 
  1   lb. fresh shrimp
  2   oz. ground pork
  ¼   teaspoon ginger juice
  ½   teaspoon salt
  1   teaspoon black pepper
  1   tablespoon white wine
  1   tablespoon egg white
  1   tablespoon cornstarch
  1   cup corn oil
  1   head green lettuce

  4.   Heat oil to 365º F in saucepan, squeeze out shrimp balls with hand, about 1.5 inches in diameter. Fry shrimp balls over medium heat until both sides are golden brown. Flatten and press each ball gently halfway through cooking.

  5.   Garnish with green lettuce. Serve with ketchup or pepper salt. Makes 4 servings.
