    What you'll need:
 
  2   crusty breads
  1   part-skim ricotta cheese
  8   cherry tomatoes, sliced
  2   teaspoons extra-virgin olive oil
  2   teaspoons finely chopped chives
    Directions:
 
  1.   Cut breads into halves. Lightly toast bread. 
  2.   Spread each toast slice with 2 tablespoons ricotta.
  3.   Drop tomato slices over ricotta, drizzle olive oil on top, about 1/2 teaspoon each.
  4.   Sprinkle with salt, and pepper; set Toaster Oven to 400° F and broil 5 minutes. 
  5.   Top with chive bits. Make 2 servings.
