    What you'll need:
 
  3   cloves garlic, finely chopped
  1   medium onion, finely chopped
  ½   cup celery, finely chopped
  2   cups cauliflower, sliced
  2   red potatoes, peeled and sliced
  1   can (10 ¾ ounces) Cream of Chicken
  1   tablespoon olive oil
  ½   teaspoon salt
  ¼   teaspoon black pepper
  2   teaspoons lemon juice
  2   teaspoons finely chopped chives
  1   cup French bread croutons
    Directions:
 
  1.   In large pan, heat olive oil over medium-high heat; sauté garlic until light brown. Stir in onion, celery, cauliflower, and potatoes.
  2.   Add 1 cup water, cream of chicken, salt, and pepper; stir to mix, cover and bring to a boil. 
Reduce heat and simmer 15 minutes.
  3.   Remove from heat, stir in lemon juice. Use blender to liquefy cooked vegetable mixture.
  4.   Top with chive bits and serve with croutons. Serve warm. Make 4 servings.
