    What you'll need:
 
  1   lb. medium-sized tail-on shrimp
  1   package 8 oz. pasta
  ½   cup grated Parmesan cheese
  2   tablespoons olive oil
  ½   cup olive oil
  ¼   cup lemon juice
  4   cloves garlic, grated
  ½   cup green onion, finely chopped
  1   tablespoon fresh parsley, finely chopped
    Directions:
 
  1.   Cook pasta by following the instructions on package. Drain. Set aside.
  2.   In large pan, heat 2 tablespoons olive oil over medium heat; sauté 3 teaspoons garlic about 1 minute. Add shrimp; stir frequently until shrimp turn red. Let cool.
  3.   Mix pasta, shrimp, green onion, and parsley in large bowl. Set aside.
  4.   In a small bowl, add 1/2 cup olive, 1-teaspoon garlic, lemon juice, and Parmesan cheese;  mix thoroughly. This is the pasta dressing.
  5.   Add dressing to pasta mixture, cover with plastic wrap and toss to mix. Refrigerate 25 minutes. Or serve immediately for warm entrée. Make 4 servings.
