Cold Blueberry Pie
Ingredients
2 pints blueberries
1 pre-baked pie shell
2/3 cup granulated sugar
2 TBSP arrowroot flour or cornstarch
whipped cream
Steps
Cook 3/4 cup of the berries in 1/4 cup of water until they are very soft.
Put cooked berries through a food mill or sieve.
Add sugar and arrowroot flour (or cornstarch).
Cook over medium heat for a minute or two to thicken.
Cool and chill mixture at least one hour.
Gently fold remaining uncooked chilled berries into the chilled mixture.
Pour into pie shell.
Garnish with whipped cream.
