      Cashew Orange Sugar Snap Peas

      This is a FLORIDA'S Choice Recipe ~ after all it is made with oranges isn't it ;-).

      *Ingredients*

      1 (1-lb) pkg. frozen Sugar Snap Peas
      1/3 cup orange juice
      1 tbs. honey
      1 tsp. cornstarch
      1/8 tsp. salt
      1/2 tsp grated orange peel, if desired
      1/4 cup cashews
       

      *Preparation*

      Cook peas as directed on the package; drain.  (Actually I cook them by putting a couple of cups of water in a steamer and steaming them till they are tender crisp - it only takes a few min. - that is the way I do most vegetables.)

      Meanwhile, in a small saucepan, mix orange juice, honey, cornstarch and salt until well blended.  Cook over med. heat until mixture boils and thickens, stirring constantly.  Stir in orange peel and cashews; stir in peas. 
       

      Serves:   6 (1/2 cup) servings

      Other Ideas for Sugar Snap Peas from Green Giant:

      • Stir-fry them in oil and garlic; toss with sliced almonds.
      • Stir cooked vegetables into rice, pasta or couscous.
      • Season with soy or teriyaki sauce.
      • Add to ramen noodle soup.
