      Zesty Shrimp And Shells

      *Ingredients*

      1 lb. pasta shells (or other pasta shape)
      5 tbs. olive oil
      1 1/2 cups large shrimp, diced
      1/2 cup ripe Plum/Roma tomatoes, diced
      1 cup Yellow Bell Peppers, diced
      1/2 cup white wine
      1 tbs. Dijon mustard
      2 tbsp. lemon juice
      1 tsp. whole Basil leaves, crushed
      1/4 cup Parmesan cheese, optional
      1 tbs. fresh Parsley, chopped
      salt and pepper to taste

      *Preparation*

      Cook pasta according to package directions.

      Add olive oil to a large preheated skillet.  Saute shrimp until opaque, adding tomatoes and peppers.  Cook until tender.

      Add white wine, dijon mustard, lemon juice and basil leaves.  Bring to a simmer and keep warm.

      Combine pasta with shrimp mixture and toss.  Add salt and pepper to taste.  Top with Parmesan cheese, parsley and serve.
       
      Garnish with lemon wedges and serve.
