      Shells With Salmon And Spinach

      *Ingredients*

      1 lb. pasta shells (or other pasta shape)
      1 cup heavy cream
      1 tbsp. grated lemon peel
      2 tbsp. lemon juice
      1 lb. shredded fresh spinach
      1 lb. fresh salmon, boned, skinned, and cubed
      salt and pepper to taste

      *Preparation*

      Cook pasta according to package directions. Set aside.
      In a large skillet over medium heat bring cream, lemon peel, lemon juice, salt and pepper to a simmer.
      Add spinach and cook one minute, until spinach is wilted.  Add salmon.  Cook gently, turning salmon pieces in sauce fro 2 to 3 minutes.
      Add pasta and toss.
      Garnish with lemon wedges and serve.

      Serves: 6 - 8
