      Flounder In Lemon-Dill This is a FLORIDA'S Choice Recipe ~ you can catch fresh flounder on the gulf coast - I have ;-).  Besides I just planted dill in the backyard day before yesterday.
       

      *Ingredients*

      3 tbs butter or margarine
      1 tbs chopped fresh dill or 3/4 tsp dill weed
      1 tbs lemon juice
      1/4 tsp salt
      1 med-sized green onion, thinly sliced
      1 lb fresh or frozen (thawed) flounder fillets
      Lemon slices for garnish

       

      *Preparation*

      In 10-inch skillet over med-low heat, heat first 5 ingredients, stirring occasionally, until butter or margarine is melted and hot.

      If flounder fillets are large, cut into serving-sized pieces.  Add flounder to butter mixture in skillet; cover and cook 5 to 8 min., until flounder flakes easily when tested with a fork, basting flounder occasionally with butter mixture in skillet.

      Arrange flounder with its sauce in warm deep plater.  Garnish with lemon slices.

      Time: about 30 min. before serving.

      Serves:   4 servings
