      Carrot Cake Deluxe

      Note: This is a very sweet carrot cake, but for a special occasion it is also very good and can turn out very pretty.

      *Ingredients*

      2 cups light brown suga, firmly packed 
      1 tsp. salt
      4 large eggs
      2 tsp. cinnamon
      1 1/2 cups cooking oil
      3 cups grated carrots
      2 cups all-purpose flour
      2 tsp. baking soda
      1/2 cup chopped nuts
      Orange Icing - see below

      Garnish: chopped, dried apricots and shredded coconut and dried apricot halves around the base.
       

      *Preparation*

      Preheat oven to 350 degrees.

      In a large mixing bowl, combine sugar, salt, eggs, cinnamon, oil and carrots.

      Beat at medium speed for two minutes.  Blend in flour, baking soda and nuts; mixing well.

      Pour into a greased and floured 10 inch (12 cup) bundt or tube pan.  Bake for 45 min. or until toothpick inserted in center comes out clean.

      Let rest for 10 min., turn onto rack to cool.

      Drizzle with icing, decorate with apricots and coconut.  garnish with apricot halves if desired.
       

      Serves:  makes 1 standard bundt cake
       

      Orange Icing:

      *Ingredients*

      1/2 cup light brown sugar, firmly packed
      1 1/2 cups 10X confectioners sugar
      3 tbs. orange juice

      *Preparation*
      In small bowl, combine ingredients; mix well.
