      (Bisquick)
      Light & Fluffy  Pancakes
      [ Tips ] Variations: [ Ultimate Melt-In-Your-Mouth Pancakes ]

      *Ingredients*

      2 cups Bisquick Original baking mix
      1 1/3 cups milk
      1 egg
      2 tbs. sugar
      1 tsp. vanilla, if desired
       

      *Preparation*

      Heat griddle or skillet over med-high heat or electric griddle to 375 degrees;  grease with cooking spray, vegetable oit or shortening.  (Surface is ready when  a few drops of water sprinkled on it dance and disappear.)

      Stir all ingredients until blended.  Pour by slightly less than 1/4 cupfuls onto hot griddle.

      Cook until bubbles break on surface.  Turn; cook until golden.  To keep warm, place in single layer on cookie sheet.  Cover with aluminum foi, and place in 200 degree oven up to 10 min.

      Serves:   14 pancakes

      Tips:
       

      • Reheat pancakes in microwave on High until hot.
      • Half recipe (about 7 pancakes): 1 cup baking mix, 1/2 cup milk, 1 egg, 1 tbs. sugar, 1/2 tsp vanilla.
       

      Variations:

      Ultimate Melt-In-Your-Mouth Pancakes:
      Stir in 2 tbs. lemon juice and 2 tsp. baking powder with the sugar.
       
      Blueberry Pancakes:
      Stir 1 cup fresh or frozen (thawed) blueberries gently into batter.

      Chocolate Chip Pancakes:
      Stir in 1/2 cup mini semisweet chocolate chips into batter.
