      Perfect Turkey Gravy

      *Ingredients*

      1 cup Pan drippings
      2 pkgs (0.45 oz each) dried porcini mushrooms
      3/4 cup hot water
      1/4 cup butter
      1/4 cup all-purpose flour
      1/2 tsp salt
      1/4 tsp freshly ground pepper
      1/4 tsp thyme
      1 cup chicken broth

      *Preparation*

      Pour reserved drippings from roasting pan through a wire strainer into a 1-quart glass measuring bowl.  Skim off fat.  Set aside 1 cup drippings for this recipe and reserve the remainder for other uses (or to make more gravy).

      Combine mushrooms and hot water in small bowl; let stand 15 min.  Transfer mushrooms with slotted spoon to cutting board, reserving liquid.  coarsely chop mushrooms.  Pour liquid through fine sieve lined with cheesecloth into bowl.  Set both aside.

      Melt butter in medium saucepan over medium heat.  Add mushrooms; cook 3 min.  Stir in flour, salt, pepper and thyme.  Cook until mixture is lightly browned, about 2 min.  Gradually whisk in reserved porcini liquid, pan drippings and chicken broth;  bring to a boil.  Reduce heat to med.-low, whisking until gravy is smooth.

      Simmer 5 min., stirring occasionally.
       
       

      Serves:  Makes: 2 1/2 cups gravy
