Marinara Sauce
*Ingredients*
1 pkg (about 3 oz) sun dried tomatoes (coarsely
chopped)
3 cups water
3 tbs. olive oil
1 onion, chopped
2 cloves garlic, minced
1 tbs. dried oregano
1/4 cup fresh basil, chopped
2 tbs. lime juice
Salt and Pepper to taste
1/4 cup chopped green peppers, optional
1/4 cup sliced mushrooms, optional
*Preparation*
Hydrate sun dried tomatoes according to instructions. Place 1/2 of the soften sun dried tomatoes in a blender or food processor with 1 1/2 cups water and puree. In a skillet saute onion and remaingin ingredients. Add puree and remainder of sundried tomatoes, and water. simmer 10 min.
Serve over hot pasta.
Serves: about 2 1/2 cups sauce
