PIES  (Our pies are 10”.)
Pies on shortcrust pastry include:
Crumb topped fruit pies: apple, blueberry, apple raspberry, apple blueberry, apple strawberry, toffee apple (this has toffee and pecans in the topping), peach
Other baked pies: pumpkin, rum pumpkin, lemon chess, pecan, pecan chocolate chip, blueberry struesel (a blueberry sour cream custard with a crunchy pecan topping), coconut custard. 

Pies on a graham crust include: 
toffee banana cream, chocolate banana cream, chocolate cream, key lime, lemon meringue.

Pies on a chocolate graham crust are:
chocolate cream cheese, cappuccino, peanutbutter. These are very rich desserts.

All of our pies hold well except lemon meringue and the seasonal pies, which need to get on the menu.
Then they hold a few days. Key limes, banana creams and fruit pies freeze well. 
They all hold well refrigerated.
Seasonal pies are:
Blueberry Orange Chantilly Cream, which is a wonderful concoction of frsh glazed blueberries and orange chantilly cream, nested in a graham crust.
Strawberry Almond Angel Pie, which is an almond meringue shell piled with whipped cream and glazed fresh strawberries.
These are priced according to the fruit prices. We can let you know when they are available, and what the current cost is.
 
LAYER CAKES
We offer 2 styles of layer cakes: a 10” round 3 layer or a 1/4 sheet 2 layer cake. The rectangle is easier to cut and serve neatly in a variety of serving sizes. A round is more elegant if you are showing the whole cake, or like the look of 3 layers. The round is 16 servings. They are both the same volume. All can be frozen and have a good refrigerator shelf life.

We do cake layers in a choice of lemon, orange, chocolate, almond or vanilla .
Custard fillings: lemon, vanilla or chocolate 
Whipped cream fillings: mocha, raspberry, strawberry, blueberry, espresso, orange, lemon, creme de menthe, rum or amaretto.
Toppings: Chocolate glaze, whipped cream, or real buttercream in a choice of vanilla, chocolate, lemon, orange or almond.

We are particularly known for working with fresh fruit. The Hyphen’s signature cake was a fruit and cream cake, layering pastry cream with sponge cake and fresh fruit. This is a warm weather seasonal dessert, as it depends on fresh peaches, strawberries, raspberries or blueberries being available. This has become known in some quarters simply as The Cake. We can deliver these, but the price depends on the fruit and the season. This is a truly wonderful dessert. You cannot freeze these.

ROULADES 
Another Hyphen specialty, this is a chocolate soufflé cake rolled around a whipped cream filling, and covered with a chocolate glaze. It is about 15” long, and serves 16.  When sliced, it looks like a giant ho-ho. Fillings include: raspberry, strawberry, espresso, mocha, creme de menthe, amaretto, orange and vanilla. Also available with a white sponge cake instead of the chocolate, the white cake does well with a lemon, strawberry or blueberry filling. Freezes well.

DOME CAKES
These are cakes that can sit out unrefrigerated (as in under a cake dome). Some are provided with sauces. These are all baked in 10” tube pans, which gives 12 good servings. They can stand alone as a casual dessert or can be used as a good starting point for a  more decadent dessert assembled at serving time. The sauces can sit out during serving hours but require overnight refrigeration.

We make a 10” New York style cheesecake in a graham crust. Each cake serves 12-16. Three fruit toppings are available: strawberry, cherry, and blueberry. We can also top it with caramel. These hold well and freeze well. We can provide these topped or with the topping on the side.

Apple Tarts Almandine   Shortcrust pastry baked with an almond filling and apple slices , fruit glazed and garnished with sliced almonds.$1.50

There is a minimum order of 12 on each of these.

TARTS ..$18
Fruit Tart  A sweet crust filled with vanilla pastry cream or a lemon filling and topped with glazed fruit. This is seasonal.
Chocolate Raspberry Tart  A rich chocolate crust with a fudgy filling and topped with raspberries.

COOKIES $6.00/doz.
These are large cookies meant to be sold individually. They are aimed at coffeehouses or front counters. Varieties include: ginger molasses crinkles, chocolate chip, peanutbutter, peanutbutter chocolate chip, oatmeal raisin, snickerdoodles, chocolate lover’s cookies (a cakelike chocolate spice cookie), cocoa meringues (extremely lowfat), orange spice meringues (completely nonfat), fudge brownie cookies (a cookie with walnuts and a brownie-like flavor), almond goofs (an almond brittle cookie), butterscotch potato chip. 

PREMIUM COOKIES $7.20/doz.
Almond crescents, smiley face cookies (these are big sugar cookies with a yellow glaze and happy face drawn in a chocolate glaze. We can do all “have a nice day faces, or give you a variety of expressions.) , seasonal cookies (Christmas cookies, gingerbread people, hearts, pumpkins, etc.), lemon cookies (iced, cakelike cookies), black and whites, raspberry filled butter wafer sandwiches, raspberry filled chocolate wafer sandwiches.

BISCOTTI $4.50/dozen
almond orange biscotti and chocolate almond biscotti.

Meringues, and biscotti can sit out almost indefinitely. Almond crescents and almond goofs have a very long shelf life. The other cookies can be frozen and pulled out as needed to restock. Without freezing, they have a shelf life of a few days if they are wrapped overnight.

COOKIE DOUGHS-for shops who want to bake things off as they need them. The number of finished cookies listed here is based on a 2 oz. scoop, which is for large, individual servings.

BREADS...$2.50 baguette, $2.00/loaf, 16 usuable (non heel) slices.
We bake a variety of breads. Baguettes are around 1.5 lbs. Loaves are about 1 lb, provided without heels (unless you want them). Varieties include wheat, wheatberry, dill, tomato basil, basic white, swiss cheese, lemon rosemary. We can also design a signature bread for your restaurant.

Muffins
We make two sizes of muffins. Texas size muffins are aimed at stores selling individual muffins.
Standard muffins are aimed at restaurants using them as a side accompaniment to a meal. 
Varieties include: blueberry, espresso chocolate chip, lowfat lemon poppyseed, lowfat lemon raspberry, vegan cherry. All muffins are struesel topped.

Cinnamon Buns
These are big and wonderful. There are six varieties, but we can make up new ones at will. The possibilities are endless. Plain (with a vanilla glaze), cinnamon raisin, cinnamon orange, brown sugar pecan (this has a nut topping), butter rum and coconut chocolate chip.
$15.00/dozen. You can order 1/2 dozen of a particular type, but the total must come out to an even dozen amount.

Scones $6.00/for 8 large (as in coffeehouse size) or $7.00 for 16 small (as in a side at brunch)
Apple, blueberry, cherry, raspberry and pumpkin. These are large, the size equivalent of a Texas size muffin. Must be ordered in multiples of 8.

Muffin Batters  For shops who like to bake daily without creating from scratch. Output is based on a 4 oz. scoop for a texas sized muffin, or a 2 oz scoop for a standard muffin

Other information
The minimum order for free delivery depends on your location. If you are interested, let us know and we can figure this up for you. Also, let us know if there is anything you would like to sample. We prefer three days notice to fill custom orders. If you need something at the last minute, call and find out what we have. We can also set up a regular order and delivery schedule which allows for changes depending on your business. This can specific, or just general guidelines (ie. 3 of some type of fruit pie, 2 decadent chocolate desserts, etc.) We want to make this work for you.
Wholesale prices, especially prices for batters and doughs, are tied to our suppliers’ prices, and are subject to changes that reflect the marketplace. We won’t surprise you. Once you are our customer, we’ll keep you informed of any price changes which may affect your order.
