1 pound Sausage (Hot)
- 1 Pound Pizza Bread dough
The Sausage can be any of your favorites, it doesn't have to be hot.
The dough is usually found either freshly made in the store, or in bags in the dairy case. It is also available frozen, or you can make your own.
- Remove the casings from the sausage.
- Cut each piece of sausage in half lengthwise
- Roll out the sausages to make them into links again, each new link will be half the thickness the old one was.
- Bake on a rack over a pan at 350 for 15 minutes or so until cooked. The rack will allow the grease to drip out as they cook.
- Remove from the oven and let cool.
- Break off a piece of the dough, and working on a flowered surface with a flowered rolling pin roll out the piece of dough until it is fairly thin. You may have to keep adding flour to keep it from sticking. If you have a pasta machine you can keep rolling it through that.
- Cut a rectangle of dough with one side the length of the sausage logs. Place a piece of sausage on that edge, roll it over and cut the dough so it just covers the sausage. Press the edges of the dough together so the sausage is totally wrapped in the dough.
- Repeat until you have done all of the sausage, or run out of dough.
- With a sharp knife, cut the wrapped sausage into pieces about 1" long.
- You can either bake them as they are for a harder crunchier crust of the dough, or let them rise in a warm location until the dough puffs up a bit for a softer crust.
- Bake at 350 until golden, about 15 to twenty minutes depending on the starting temperature of the dough.
