Strawberry Pie

(at the beginning ot the middle of June the fresh strawberries are ready to be picked in our area. We usually get 40 or 50 pounds when they come in in three or four trips to the pick your own farms, we freeze half and use the other half in things like this)

 

Hull 1 1/2 quarts berries, mash half of them. Combine 1 cup sugar, 3 Tablespoons cornstarch, add the mashed berries, cook for 5 minutes until it is clear and thick. Cool, stir in 2 tablespoons lemon juice, cool again until very thick. Add the rest of the whole berries, pour into a baked 9" pie shell.

 

It goes without saying to serve with fresh whipped cream.
