Pesto

 

Needed (don't skimp in the ingredients, the better the oil and cheese the better the final result):

Fresh Garden Basil

Olive Oil (A&S has an excellent, but expensive one at $15/qt)

Pine Nuts (in the summer they are in the produce section)

Imported Romano Cheese

 

We usually start with a food processor bowl of Basil and add about 1/2 cups of the pine nuts while it is running. Add the oil to get the consistency right, then some more basil to fill it up again. Add another 1/2 cup of pine nuts and about 1/2 lb of the cheese. As the taste of all the ingredients varies depending on the brand and time of year, keep tasting to to make any adjustments.

Put in whatever container you will store it in and float a layer of olive oil on top to keep it from turning brown. Will freeze very well.
