Rice with Chorizo and Mushrooms
Remove the sausage from the casing, cook all the way through breaking it up as it cooks.
Clean and thinly slice the mushrooms.
Remove the sausage from the pan, leaving the drippings. Cover to keep warm
Cook the mushrooms in the sausage drippings until they are cooked through.
Prepare the rice in the usual way, let it cook all the way through
Once the rice is done return the sausage to the pan to heat it up again, then add the rice and mix well .
Stir in the grated cheese, serve hot.
