Fireball 500 Pepper Steak
Note - To do this right you have to get a pan very very hot and you will create a ton of smoke. It may be best to do this outside.
Trim a 1 inch thick steak (about 1 1/2 pound), reserve the fat. Dust with a mix of 1 teaspoon cayenne and 1 teaspoon black pepper. Press the pepper into the meat, repeat for the other side, let it sit for 30 minutes.
Cook the fat and one large sliced onion. Turn the heat up to high to get the fry pan very very hot. Fry the steak for three minutes on the first side, turn it over and fry for another two (weigh it down while cooking to sear it real good). Remove the steak and add 1/4 cup of water to the pan, scrape for gravy.
