Mini Cheese Cakes

 

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/4 cup melted butter

3 8oz packages cream cheese

1 14 oz can sweetened condensed milk (not evaporated milk)

3 eggs

2 teaspoons vanilla extract

fruit pie fillings for toppings

 

Combine crumbs, sugar, butter, press into 24 paper lined cupcake cups.

Beat cheese until fluffy, then beat in sweetened milk, then eggs, then vanilla until smooth.

Spoon about 3 tablespoons into each cup, bake at 300 for 20 min.

(for chocolate cheese cakes melt 6 oz of semi sweet chocolate chips and add to batter)
