Chocolate Almond Cake
Grease and flour two 9" pans.
Cream the butter and 2 1/2 cups of the sugar. Add the egg yolks one at a time mixing well after each. Stir in the chocolate until it is well mixed, then add the flour, almond extract and ground almonds.
Beat the egg whites until soft, then add the rest of the sugar and salt, beat until stiff peaks and shiny. Fold one third of the whites into the batter, then fond in the rest. Bake at 350 for 30 minutes, until the sides set. The center will appear underdone, that is how it should be.
