You need to look at small CNC tools and possibly 3D scanning technology if each egg is
of somewhat different size and geometry. You'll have to scan each egg to get x,y,z
coordinates and then modify the data to fit that baseline. You may also need multi-degree
of freedom abilities in the machining head and special tools that can withstand the
abrasive nature of the material. Another way would be to use robotically controlled
abrasive jets or maybe even lasers.
This won't be cheap.
