Baked Eggs – Corn Dish

 

8 slightly beaten eggs

1 Tbsp Fresh Basil

2 Tbsp Olive Oil

1 Cup whole kernel Corn

1/2 cup chopped Zucchini

1/3 cup sliced Onions

3/4 cup chopped Tomatoes

1/2 Shredded cheese (optional)

 

Mix all ingredients together in bowl, pour into a baking dish and bake at 375 until firm. Cheese maybe added later on servings. Serve 4 to 6 people.

 

 

Cranberry-Strawberry Sauce

 

In a medium saucepan combine 1 cup sugar (optional) and 1 cup water. Bring to boiling, stirring to dissolve sugar about 5 minutes. Add Cranberries, return to a boil and simmer 3 to 4 minutes until skin pop, strawberries added now and bring to gentle boil. Remove from heat, cool.

 

 

Glazed Carrots with Brown Sugar

 

1 lb carrots with tops

1 Tbsp of Olive Oil

1 Tbsp of grown sugar

 

Cut carrots in half, cross and lengthwise. In a saucepan cook covered in boiling water for 8 to 10 minutes until crisp-tender. Add brown sugar and cook for two minutes – remove from heat and add Olive Oil or butter. Serves 4 or six.

 

 

Corn Cakes with Chives

 

2 Tbsp all-purpose Flour

1 1/2 tsp Baking powder

1 tsp Sugar (optional)

1/2 tsp salt (optional)

1 cup boiling water

1 cup yellow cornmeal

1/4 cup milk

1/2 cup whole kernel corn

1 slightly beaten Egg or White

1 Tbsp fresh Chive snipped

1/3 cup dairy sour cream

 

Mix and bake like pancakes.
